Food safety – Healthy food which can also be toxic

Rabarbersæsonen er startet og nu kan vi nyde denne lækre grøntsags syrlighed. Syrligheden passer perfekt i søde retter og bagværk. Jeg er vild med rabarber og forsøger at indkoropererer dem i min kost mens de er helt nye og frisk.

Men – ja der er et men, fordi rabarber indeholdet også giftstofet oxalsyre, som kan give kvalme, opkast og svaghed selv i små mængder.

Det er også almindelig kendt at mange af de råvarer vi spiser dagligt også indeholder eller kan indeholde giftstoffer. Det betyder ikke, at vi skal holde os fra disse madvarer, men i stedet at vi skal være lidt varsomme med at behandle dem korrekt og ikke spise over de anbefalede mængder.

I anledning af starten på rabarbersæsonen, vil jeg dele lidt vigtig information om hvordan du undgår at din sunde kost bliver giftig.

På Womenshealthmag.com fortæller Joan McVoy, der er klinisk diætist og giftspecialist ved Nebraska Regional Poison Center, hvilke almindeligvis sunde typer grøntsager, frugt og lignende som indeholder eller kan indeholde giftstoffer, og hvordan du skal forholde dig til dem.

Rabarber
Rabarberstænglen, som er det vi spiser af rabarberen, er fyldt med antioxidanter og kalk, og derfor lige så sund, som den smager godt. Giftsstoffet optræder nede ved roden og oppe ved selve bladet. Denne del af stænglen indeholder oxalsyre, som kan give kvalme, opkast og svaghed selv i små mængder. Det er derfor vigtigt at skære roden helt væk og det samme med bladdelen, og vask stænglen godt, før du koger eller bager den.

Kartofler
Kartofler er en basis grøntsag for mange, og du kan da også trygt spise dem, så længe de ikke har noget grønt på sig. Også selvom det kun er et svagt grønt skær under skrællen. Det grønne er nemlig et tegn på, at kartoflen har fået sollys og dermed udviklet giftstoffet solanin. Det kan give hovedpine, kvalme, træthed, opkast, mavepine og diarre, hvis du spiser det. Ifølge Joan McVoy er det nok at skære det grønne væk fra kartoflen, men er den meget grøn, bør du smide den ud.

Frø og kerner
Frø og kerner fra æbler, pærer, mango, ferskener, abrikoser, nektariner og kirsebær indeholder faktisk amygdalin, der kan transformere sig om til et andet giftstof kaldet hydrogencyanid. Det kan give hovedpine, anfald, kvalme, opkast, øget hjerterytme og blodtryk. Derfor bør du ikke knuse eller tygge dem. Så længe du sluger fx æblekerner hele, sker der ikke noget ved det, forklarer Joan McVoy.

Se her var en information som jeg ikke kendte, dog spiser jeg aldrig kernerne fordi jeg synes de smager grimt. Nu ved jeg at der er en grund til jeg synes de smager grimt – de er giftige.

Kidneybønner
Kidneybønner er både sunde og billige, men spis dem endelig ikke rå. De indeholder nemlig lectin. Hvis du skal bruge rå kidneybønner i en ret, så skal de ligge i blød i vand i mindst fem timer og skylles godt bagefter. Vandet må ikke genbruges. Kog dem derefter i ti minutter, og pres vandet fra, før du spiser dem.

Limabønner

Limabønner er rige på proteiner, folsyre og fibre, men de indeholder også giftstoffet limarin, og det kan give kvalme, opkast og mavepine. Det skal derfor koges mindst ti minutter, før du spiser dem, og alternativt kan du vælge at spise dem fra dåse, da de er behandlet korrekt på forhånd.

Jeg ved ikke om du vidste dette i forvejen, for mit eget vedkommende så har jeg lært noget om frø og kerner fra æbler, pærer, mango, ferskener, abrikoser, nektariner og kirsebær som jeg ikke vidste i forvejen.

As long as you swallow such as apple cores whole , there is not anything about it, ‘said Joan McVoy .

See here was information I did not know , but I never eat the seeds because I think they taste nasty . Now I know that there ‘s a reason I think they taste bad – they are toxic .

Kidney Beans
Kidney beans are both healthy and cheap , but eat them finally not raw. Namely they contain lectin . If you must use raw kidney beans in a dish, so they must be soaked in water for at least five hours and rinse well afterwards. The water can not be reused. Boil them then for ten minutes , then squeeze the water off before you eat them .

lima beans
